This recipe is a quick easy way to get rid of those overripe bananas and get the reward of a tasty muffin. I adapted this recipe from one of my favorite cookbooks Mad About Muffins by Dot Vartan. I used her New England Banana Muffin recipe and added 1 cup of chopped walnuts. I love muffins that have the addition of nuts and usually add them to most muffin recipe’s.
Directions:
- Heat oven to 375 degrees.
- Add flour, baking soda, and baking powder to a medium bowl and stir well with a whisk.
- Mix in the sugar.
- With a fork combine the melted butter, beaten egg, vanilla extract, bananas, milk, and maple syrup in a large mixing bowl.
- Add the flour mixture and chopped nuts to the banana mixture, Stir just until blended and all dry ingredients are moistened.
- Scoop the batter with a 1/4 cup ice cream scoop and place the batter into greased muffin tins or muffin tins lined with cupcake liners.
- Bake 20 minutes or until the muffins are lightly brown.
- Enjoy!
