Aunt Shirley’s Mexican Cornbread
Directions: Brown beef, onion, bell pepper in saucepan. Mix cornmeal, buttermilk, soda, corn, eggs, cayenne pepper. Add oil and salt and mix. Pour 1/2 mixture into greased 13×9 dish; layer meat mixture and cheese; top with remaining cornmeal mixture. Bake 300° for 45 minutes. Source: Shirley Cantrell

Deluxe Pecan Pie
Directions: Beat eggs slightly mix corn syrup, sugar, butter, vanilla, and salt. Add nuts and pour in unbaked pie shell Bake at 350° for 30-35 minutes. Note: Pie is slightly less set in the center. You can add 1 tbsp. cornstarch to corn syrup before adding to egg mixture. Source: Eleizabeth Gates (1980)

Caramel Popcorn
Directions Cook sugar & butter over medium heat stirring constantly for about 10 minutes. Remove from heat and add vanilla & soda. Pour over popcorn & pecans; stir well. Pour spread on baking sheets and bake at 250° for 1 hour. Note: This is a great Halloween treat!

One Pan Pumpkin Bread
Directions Grease loaf pan. stir all ingredients except nuts & raisins in pan with fork. Beat vigorously for 1 minute. Add nuts & raisins. Bake at 350° for 45-55 minutes. Tip: You can mix in a separate bowl — then pour into loaf pan. You can use “Baker’s Joy” spray instead of greasing pan.

Chocolate Trifle
Directions Bake brownie mix according to package directions. Once baked — prick top at one inch intervals with fork and drizzle Kahlua and let cool and crumble. Prepare pudding according to package directions (omitting chilling). Place 1/3 of crumbled brownie in trifle dish. Top with 1/3 pudding; then Cool Whip; then crushed candy bars. Repeat 2x’s…

Egg & Sausage Casserole
Directions: Press crescent rolls in 9×13 baking dish filling the bottom of dish and inside wall. Brown sausage and drain. Beat eggs, half & half seasonings.
